Race cars typically use sequential or paddle-shift transmission, which don’t need a traditional clutch pedal once moving; however - the clutch is still necessary for:

• Launching the car from standstill
• Pit stops
• Low-speed manoeuvres
• Recovering from stalls or traction loss

Clutch paddles control your clutch engagement more precisely whilst allowing you to keep your hands on the wheel.

The left clutch paddle is the primary clutch for launch control, adjustable for precise bite point. The right clutch paddle is the secondary clutch used for redundancy, or sometimes as a handbrake or quick clutch release depending on your setup.
